  • 1 lb. Earthbound Farm Organic Sugar Snap Peas, trimmed
  • 1 tablespoon olive oil
  • ½ small red onion, thinly sliced
  • 1 cup cherry tomatoes
  • ½ teaspoon dried Italian seasoning, crushed
  • Salt and pepper to taste
  • Lemon zest

Heat olive oil in a cast iron skillet on medium high until shimmering, not smoking. Add onion and sauté until soft and slightly charred. Turn the heat up to high and add sugar snap peas and cherry tomatoes to the skillet. Sauté quickly until blistered. Season with salt, pepper and Italian seasoning. Serve on a platter and garnish with lemon zest.
