Blackberry Vanilla Sauce

Ingredients
- 5 cup Earthbound Farm Frozen Organic Blackberries
- 1/2 cup Sugar
- 1 vanilla bean
- 2 teaspoons fresh lime juice
Having a fresh fruit sauce on hand makes putting together dessert a simple affair. Just drizzle a few tablespoons over ice cream, frozen yogurt, or a slice of angel food cake…and you have something delicious!
Frozen blackberries work perfectly in a sauce and are a much better bargain than buying them fresh. The hint of vanilla adds a subtle nuance, but you can substitute one pod of star anise if you don’t care for vanilla. The sauce isn’t too sweet, so it’s perfect with plain yogurt or added to a fruit smoothie.
This recipe makes about 1-1/2 cups of sauce, or about 12 2-tablespoon servings.
Place the blackberries, sugar and vanilla bean in a saucepan. Cook over medium to medium-low heat, stirring frequently, until the blackberries fall apart, about 15 minutes. Let cool for 15 minutes, then remove the vanilla bean; rinse and reserve it for another use. Stir in the lime juice.
Pass the sauce through a fine mesh sieve and discard the seeds. The sauce can be refrigerated for up to 5 days, covered tightly, or frozen for up to 3 months.
