Well, it’s THAT time of year. The big game. Love it, hate it or indifferent, it is a fun excuse to gather friends and family for sports entertainment and camaraderie. Or, if it’s a mixed audience, hopefully some friendly competitive razzing.

Whether you’re in it for the game itself, the advertisements, the half-time show or the grub, having the right menu is key to hosting a successful party.

You may be thinking, hey Earthbound Farm, don’t you dare tell me to eat a salad on game day! We wouldn’t dream of it.

Check out these loose inspirational “recipes” for easy game day snacks, with added Chopped Salad Kit crunch, and make them your own! For each of these, we simply prepared the corresponding chopped salad kit first and then compiled the rest as indicated.

  • BBQ Ranch Pulled Pork Sliders. The good news is many specialty grocery stores now offer high quality, ready-to-heat-and-eat pulled pork in bbq sauce, which makes this recipe even easier. Take a multi-pack of sweet Hawaiian slider rolls, slice the rolls in half, pile on the pulled pork (don’t be shy to use extra bbq sauce if you like your sliders particularly saucy), add a generous spoonful of your prepared BBQ Ranch Chopped Salad, replace the top of the bun and voila…a delicious snack that’s simultaneously sweet, savory, soft and crunchy!
  • Southwest Nachos. Nachos are always a crowd-pleaser and easy to tailor with your favorite ingredients. While we personally don’t like to give up all of the more indulgent, traditional ingredients found in nachos, we do like to balance them out with the textural contrast and brightness of veggies. Start with an oven safe casserole dish or baking sheet and add corn tortilla chips, smothered in Mexican blend shredded cheese, shredded chicken (we simply pulled meat from an herbed, roasted rotisserie chicken) and black beans…throw under the broiler until the cheese is melted and starts to brown. After removing it from the oven, add a few large scoops, evenly spread, of the prepared Organic Southwest Chopped Salad; thinly sliced jalapenos and radishes; diced scallions; drizzle on some Mexican sour cream; crumbled queso fresco and sliced avocado (or scoops of guacamole). We love the totally craveable flavors and textures going on here, and it’s beautiful and colorful to boot!
  • Asian Wrap. There are so many interesting directions to go these wraps, so again, make them your own. We started with spinach tortillas; sliced some grilled chicken breast and tossed with our favorite teriyaki sauce and placed on the tortilla; we then added several slices of fresh mango, two large scoops of prepared Organic Asian Chopped Salad and drizzled with sriracha mayo, sprinkled with sesame seeds…and then rolled the tortilla into a wrap. (Insider tip: use the mayo to help “seal” the edges of the tortilla shut.) Cut the wrap in half, cover the bottom portion in parchment for easy party snacking, and you’re good to go!
