Serve it alongside a salad of fresh organic greens for a satisfying weeknight supper or lovely weekend brunch. Leftovers — if you have any — are even better for lunch the next day.
Power and Potato Frittata

Ingredients
16 eggs
1/4 cup olive oil
2 tablespoons sunflower oil
1-1/2 teaspoon dried dill
1/4 teaspoon ground nutmeg
1 cup grated Parmesan cheese
1 cup seeded, chopped tomato
3 teaspoons salt
1/2 teaspoon ground black pepper
8 ounces Earthbound Farm Frozen Organic Power Blend (1 package)
3 cups Earthbound Farm Frozen Organic Roasted Red Potatoes
Directions
Preheat the oven to 350 degrees F. Butter or spray a 9×13” baking pan and set aside.
Whisk the eggs with the oils, herbs, cheese, tomatoes, salt and pepper in a large bowl. Break up the frozen greens with your hands as much as possible and add them to the mixture. Add the frozen potatoes and stir to thoroughly combine all the ingredients.
Pour the mixture into the prepared pan. Bake for 45 minutes or until brown and puffy. The mixture should be firm at the edges and set in the middle. To check, wiggle the pan gently; if the eggs in the middle of the pan are still jiggly, return to the oven for 5 more minutes and check again. Serve warm or at room temperature.
