Spring Mix with Apple, Bacon, and Stilton

Serve this tasty salad in the autumn when new crop walnuts and apples are in their prime. The contrast of tastes and textures is what makes this salad successful: the salt of the bacon is mellowed by the sweet juiciness of the apple, and the mild pungency of the Stilton adds earthy creaminess.

Ingredients

2 Tbsp

balsamic vinegar

1 tsp

Dijon mustard

1 tsp

finely minced shallots

¼ tsp

salt

0.125 tsp

freshly ground pepper

3 Tbsp

walnut oil

3 Tbsp

extra-virgin olive oil

Earthbound Farm Organic Spring Mix

½ cup

toasted walnut pieces

strips thick-cut bacon (diced and cooked until crispy)

2 oz

Stilton cheese (or other blue cheese) (crumbled)

organic Gala and Fuji apple (thinly sliced)

Directions

Combine the vinaigrette ingredients in a glass jar and shake vigorously to combine.

Place the greens in a salad bowl and add half of the vinaigrette. Toss to coat the leaves, adding more dressing sparingly, as needed.

Divide the greens among 4 chilled salad plates and sprinkle each serving with some of the nuts, bacon, and cheese. Garnish with the apple slices and serve immediately.
