extra-virgin olive oil
champagne vinegar (preferably aged)
pepper (to taste)
prosciutto ham (cut into 1/2 by 2-inch strips)

ripe cantaloupe or Galia melon
Cut the melon in half and discard the seeds. Cut the fruit into long 1-inch slices (discard the rind).
Wrap melon slices with halved prosiutto slices
Place the salad dressing ingredients in a medium-size bowl and whisk to combine. Add the arugula and toss to coat the greens. Divide the arugula among 6 chilled salad plates.
Garnish each serving with melon wrapped in prosicutto
Season to taste with salt and pepper.
